I might be blind...but how can get a chart of the humidity level and export the data.

a not native chart in HC for humidity

but you can 

for example:

http://192.168.1.36/api/panels/event?from=1&deviceID=761

where 192.168.1.36 - IP HC

761 - humidity sensor

    2. What should I use to get the graph

    sorry, your question is not clear to me.

    via API you can get all for building own  chart. it's meat you know how to build own chart for example via grafana.com or hand-made via any JS tools.
