Can it be connected to an universal sensor and function just like the DS18B20?

Not possible with current firmware. The UBS can only handle the 18B20 as a 1W device. You will have to find a humidity sensor with DC output and use a RGBW

EE060 (also availanla as combined rH/Temp) should be a pretty good match. I have not used it, but it should be a great fit. It is, however, quite expensive for normal hobby use.

Please note the three different versions require differend supply voltages. You probably wopuld want HT2 or better yet HT3 for use with the RGBW.

Or, you could use [whatever]humidity sensor, drop an arduino or other similar MCU into th emix and provide the RGBW with an analouge level.
