Using 2x on/off action to start a scene

I have bathroom fan connected to the light. When the light is on, fan is running. I would like to build the following scene:

If light in bathroom is running for longer than 2 minutes, after I turn it off, it will turn on after 10 seconds on automatically for 5 minutes.

Second scene, I would like to manually trigger this 5 minutes countdown trough the light switch, but as soon as I know, FGS doesn't support double or triple click for scene activation. My idea is to be able to start the scene in case when I 2x turn on and off this light within 10 seconds.

Any idea how to build this scene in blocks, or with LUA?

Any help is appreciated.
