can I get my sonos to play a doorbell when my doorbell is pressed

yes-no :)

unfortunately, HC is not open project and you can't install any 3d party services, modules to HC OS, for example like pip install soco

plus as far as I know, Sonos doesn't make API available over http.

so you have only one way here - "proxy" application (nodejs on rpi for example)

HC2 call via http your application server, your application server connecting to Sonos and playing sound.

yes, it hard. It's what we all deserve.
