lua gsub question

Want to replace some characters with a one linear of gsub but fails. But with 2 steps it works, first i take care of Celsius symbol and second gsub will do the rest.

Need a more advanced pattern than %p because the ring character is a multibyte (unicode) character and don't match %p. multibyte characters in general seems to make a mess of lua patterns and need to use the 2 byte unicode for ring. the above pattern works but is a bit ugly - patterns aren't that good at matching alternative strings...
