How do you deactivate a profile?

By activating another? :-D

Assuming, there is always one of the profiles active...

    I'm hoping that you can have more than one active, like sleep states for the kids rooms (each separate). else its back to the good old globals

    nope, profile is set of setting for your house so you can have only one active, but you can create that many how much you need
